Arugula - Rocket Salad

Arugula is a green much like lettuce and is best in cool temperatures. Plant in early spring, 3 to 4 weeks before the last average frost date and plant successive plantings therafter every 3 weeks until first fall frost approaches. Rocket Salad Arugula prefers light, fertile, moist, and well drained soil. The interesting flavor of Arugula will add spunk to any boring salad. The Arugula Rocket Salad Roquette, 'Eruca sativa', is one of the most popular "new" greens. In warmer climates, delay planting during the heat of the summer. The flowers are white and are also edible. Descriptions such as hot with a hint of nut flavor, tart, and spicy are used to describe Arugula. Roquette Arugula is most often eaten raw in salads but is also steamed or added raw to many other dishes, such as pizza. Arugula, when mature, grow to 2 to 3 feet tall, but the leaves are tastiest and less bitter when harvested 2 to 6 inches long. ... more information

 

Bok Choy - White Stem The Bok Choy White Stem, 'Brassica rapa (Chinensis Group)', is two vegetables in one with tasty spinach-like leaves and crunchy sweet stems. They are used in stir-fries with beef, pork and seafood. They are great in salads when the leaves are young. Drop into soup and simmer just long enough for leaves to become limp. Steam them like spinach for a tasty side dish. White Stems are also called White Mustard Cabbage or Pak Choy. Plant as soon as the soil can be worked in the spring. In mild climates, plant in late fall for winter harvest. Bok Choy prefers rich, moist, well drained soil with lots of organic matter. Harvest the heads after 8 weeks, or when the yellow flowers emerge from the center.
