Carrot - Little Fingers

The 3 inch long carrot is smooth and cylindrical and very uniform in shape. Did you know that grocery store baby carrots are actually cored regular carrots? Once you try the sweet and crisp flavor of this true baby carrot, you will never look back. The single most important factor in growing carrots is to have a deep, clod and rock free, well drained soil. In very warm climates carrots are grown primarily in the fall. Even moisture is essential. A 50% peat moss mix with the soil is ideal. Carrot seed germinates in soils as cold as 45 degrees, but performs best in warm soils. The Carrot Little Finger, 'Daucus carota var staivus', is a baby gourmet mini-carrot carrot. The first sowing should be 2 to 4 weeks before the last frost. Even if it is harvested early, it will have a deep orange color, a tender core and a sweet flavor. Corn - Honey & Cream Corn is usually ready 3 weeks after silks appear. The plant has 6 to 7 inch ears with 10 to 12 rows of very tender kernels. Harvest the ears when the husks are dark green and the silks are brown but not brittle. Successive plantings in two week intervals will produce a much longer cropping season. If we had to choose two vegetables that were much better home grown than bought from a store, corn and tomatoes would be our choice. Corn prefers a deep, rich well drained soil. It is great fresh and Honey and Cream can be canned or frozen. The Corn Honey & Cream, 'Zea mays var rugosa', is excellent for small gardens and short growing seasons. In the deep south, this can be as early as February.
